Our dough starts with a sourdough starter built from honey, yeast, flour, and water — fed every single day for over a year. At mixing time, honey goes in again alongside bread flour, water, olive oil, and salt. That's it. Fermented slowly right here in Colorado for 72 hours. The result is a living, flavorful dough with a leopard-spotted char that gets everyone talking.
